Rotisserie Chicken & Broccoli Slaw Wraps

 

Ingredients: 

For the Broccoli Slaw:

  • 1 (12 oz) bag Church Brothers Broccoli Slaw

  • 1/2 cup mayonnaise (or Greek yogurt for lighter option)

  • 2 tbsp honey

  • 1 tbsp apple cider vinegar (or rice vinegar)

  • 1 tsp Dijon mustard

  • 1/2 tsp garlic powder

  • Salt & black pepper, to taste

  • 1/3 cup sliced almonds

  • 4 slices bacon, cooked crisp and crumbled

  • 1/2 medium red onion, diced

  • 1 Honeycrisp apple, cut into thin matchstick strips


For the Wraps:
 

  • 4 honey wheat (or no added sugar) wraps/tortillas

  • 2 cups shredded rotisserie chicken

 

Instructions: 

Cut the Apple into Matchsticks: Wash and dry the apple. Cut into quarters and remove the core. Place a quarter flat-side down on a cutting board and slice into thin slices (about 1/8 inch thick). Stack 2–3 slices and cut into thin strips to make matchsticks. Set aside.

Make the Slaw: In a large bowl, whisk together mayonnaise, honey, vinegar, Dijon mustard, garlic powder, salt, and pepper. Add the broccoli slaw mix, almonds, bacon, diced red onion, and apple matchsticks. Toss until evenly coated, using tongs or a large spoon.

Assemble the Wraps: Place shredded rotisserie chicken down the center of each wrap. Top with a generous scoop of broccoli slaw.

Wrap & Serve: Fold in the sides first, then roll tightly from the bottom up. Slice in half and enjoy immediately.
