INGREDIENTS:

 

Instructions: 

On a large round platter, arrange snow peas and vegetable medley in a circular wreath shape, leaving space in the center.

Add cherry tomatoes around the wreath for pops of red.

In a food processor, combine 1 ½ cups basil, pistachios, garlic, Parmesan, lemon juice, salt, and pepper.

Slowly stream in olive oil while blending until smooth and creamy.

Transfer pesto to a small bowl and place in the center of the wreath.

Garnish wreath with remaining basil leaves. 

Serve immediately as a festive appetizer tray.
