Festive Veggie Wreath with Pistachio Pesto

INGREDIENTS:
1 bag Church Brothers Farms Vegetable Medley (broccoli, cauliflower, carrots)
1/2 cup cherry tomatoes (optional)
2 cups fresh basil leaves
1/2 cup shelled pistachio
2 garlic cloves
1/2 cup freshly grated Parmesan cheese
1/2 cup extra virgin olive oil (more as needed)
Juice of 1/2 lemon
Salt and pepper to taste
Instructions:
On a large round platter, arrange snow peas and vegetable medley in a circular wreath shape, leaving space in the center.
Add cherry tomatoes around the wreath for pops of red.
In a food processor, combine 1 ½ cups basil, pistachios, garlic, Parmesan, lemon juice, salt, and pepper.
Slowly stream in olive oil while blending until smooth and creamy.
Transfer pesto to a small bowl and place in the center of the wreath.
Garnish wreath with remaining basil leaves.
Serve immediately as a festive appetizer tray.
