Broccoli Cauliflower Tater Tots

A fun, flavorful and healthy twist on the classic tot! They are baked, not fried and make an easy cheesy bite-size side dish or snack.
INGREDIENTS:
2 cups Church Brothers Farms Broccoli and Cauliflower Florets; cut into small pieces
1 Yukon Gold Potato; peeled and cut into small cubes
1 egg lightly beaten
1/2 cup sharp cheddar cheese; shredded
1/2 cup shredded or grated parmesan
1/4 cup breadcrumbs + 2 tablespoons
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Preheat oven to 375 degrees F and line a baking sheet with parchment paper or lightly grease with non-stick spray.
Steam broccoli, cauliflower and cubed potatoes until tender, about 8-10 minutes then drain well. Cool and pat the steamed veggies down with a towel to absorb as much moisture as possible.
Add the veggies to a bowl and mash with a potato masher or a fork.
Add remaining ingredients and mix until combined.
Use a mini ice cream scooper (equivalent to 1 1/2 tablespoons) to form tots- about 1- 1 ½ inch long.
Place on prepared baking sheet and bake for 20 minutes or until lightly golden brown, flipping half way. Let cool for a few minutes and serve with ketchup or your favorite dipping sauce.
