Beef and Vegetable Rice Bowls

Hearty and wholesome Beef and Vegetable Bowls come together in under 30 minutes and are packed with savory flavors and fresh vegetables. They’re quick and easy to make, and perfect served over rice or noodles for a satisfying meal.

Ingredients: 

For the Stir Fry

 

For the Sauce

  • 2 cloves garlic; finely chopped

  • ⅓ cup + 2 tablespoons water or beef broth

  • ⅓ cup regular or reduced sodium soy sauce

  • 2 tablespoons brown sugar

  • 1 ½ tablespoons cornstarch

  • 1 ½ tablespoons sesame oil

  • 1 teaspoon fresh grated ginger; loosely packed

 

For Serving

  • Cooked white rice or noodles

  • 2 teaspoons sesame seeds; to garnish (optional)

  • 2 green onions; thinly sliced to garnish (optional)

 

Instructions: 

  1. Whisk together all of the sauce ingredients in a large measuring cup or bowl and set aside. 

  2. In a large frying pan, skillet or a wok over medium-high heat, add 1 tablespoon of oil and let heat for a minute. In the meantime, slice the carrots in half lengthwise. Add vegetables and cook until bright and vibrant in color, about 3-4 minutes. Transfer to a plate.

  3. In the same pan, add the remaining oil and meat slices in a single layer. Be sure to spread out all of the meat slices so each piece is touching the hot pan. Sprinkle with salt and pepper and let cook for one minute and then using tongs, flip the meat and add the vegetables back to the pan.

  4. Pour the sauce all over the meat and vegetables, stir until completely coated, then cover with a lid. Cook for 8-10 minutes or until the vegetables are tender and the sauce has thickened.

  5. To serve, add rice or noodles to a bowl and top with beef and vegetables. Top with more sauce and garnish with sesame seeds and green onions (optional). Enjoy!
