PARTNERING WITH COMPASS GROUP

The food waste trend is top of mind for many companies today.  We believe the wasted food at point of harvest could be more acceptable with the food service sector as consumers choose off a menu description; compared to a retail point where shoppers buy with their eyes.

The Compass Group is leading this trend, helping tell this story with their #IDP, Imperfectly Delicious Produce product line and build awareness with restaurant operators, chefs and consumers.

Broccoli Floret Byproduct

4 three pound bags - triple Washed

These are the smaller pieces of broccoli that fall through the sizer and do not make standard, market size specification as a full broccoli floret.

THE STORY: Our Eco-Friendly program allows us to capture the smaller pieces of broccoli that would be left behind as byproduct from the production process.

ADVANTAGES: Allows our growers to capture and sell more of what each broccoli plant produces, increasing yields and reducing water and food waste.

Cauliflower

20 Pounds - Not Washed

This Eco-Friendly product will be various shapes, sizes and color and sold
by weight compared to the traditional count. Standard product specification for traditional cauliflower is a crisp-white colored head with no cosmetic blemishes. Large temperature swings may cause yellowing of the cauliflower. The bigger the variance in temperature, the more the yellowing of the cauliflower, creating out –of-specification product.

THE STORY: Our Eco-Friendly program allows our growers to harvest more product in the field, despite the size or color of the head of cauliflower

ADVANTAGES: Less byproduct, increased use of mature product rather than rotating back into the soil.

Cascade Mix

5 Pounds - triple Washed

The cascade blend is the byproduct of our whole leaf production line, the center, small leaves of a head of Romaine that do not make “whole leaf” size specifications.

THE STORY: Our Eco-Friendly program allows us to harvest the leaves that would be left behind as byproduct from the value-added whole leaf production process.

ADVANTAGES: Allows our growers to capture and sell more of what each plant produces, increasing yields and reducing water and food waste.

Romaine Leaves

14 Pound box with liner - not washed

There is no standard specification or pack style for this byproduct. The harvest practice of "peeling down" a full head of romaine until it reaches expected size, color and had no cosmetic flaws creates a vast amount of byproduct romaine leaves in the field during harvest.

THE STORY: Our Eco-Friendly program allows us to harvest the leaves normally left behind as byproduct from the harvest process.

ADVANTAGES: Allows our growers to use more of what each plant produces, increasing yields and reducing water and food waste.

Baby Kale Blend
Baby Chard Blend
Clipped Spinach

Kale Blend, Baby Chard Blend, Clipped Spinach - Second Crop

7 pounds - Not Washed

The standard version of these three crops starts from seed and can take 45 to 65 days to grow a first crop, depending upon time of year (summer vs winter). Because this crop starts from seed, the highest point of water usage in the crop cycle is from the point of seed to germination when it establishes a shallow root system.

Water usage is commonly measured out by number of hours. It takes 12 to 24 hours of watering total to get the new crop past the germination point and establish roots. Once the crop is harvested the first time, the left over plant system is rotated back into the soil.

With the Eco-Friendly program we can grow a second crop with the same established root system; it takes only 14 to 21 days for the plants to produce a second crop. The difference between the first and second crop is that approximately 10 percent of the leaves harvested will be Imperfect or “out of standard specification” since 10 percent of the leaves are:

Less than 3-inches in length
May have a cosmetic issue a with brown fringe
THE STORY: The second crop only needs half of the water volume used for the first crop since the root system has already been established.

ADVANTAGES: Shorter growth cycle and 50 percent reduction of water use.
