Little Gem Salad
with Tarragon Green Goddess Dressing
Servings: 4
Ingredients:
Dressing:
1 cup mayonnaise
3/4 cup sour cream
1/3 cup packed fresh tarragon leaves
1/3 cup packed fresh chives
1/3 cup packed Italian parsley
1/3 cup packed spinach leaves
3 tablespoons fresh lemon juice
1 tablespoon Champagne vinegar
1 garlic clove
1 anchovy filet
1 pinch cayenne pepper, or to taste
1/2 cup canola oil
Salt and freshly ground black pepper to taste
Salad:
4 heads Church Brothers Farms Little Gem lettuce, leaves separated, torn and washed
4 radishes, topped and sliced thinly
1 avocado, pitted and diced
Instructions:
Dressing: Place all dressing ingredients in a blender and process until smooth. Adjust salt and pepper as needed.
Assemble: In a large salad bowl, add Little Gem lettuce, the sliced radishes and diced avocado. Add 2-3 tablespoons of the dressing, tossing lightly to combine, adding additional dressing if needed. Serve immediately.
