Char-Grilled Little Gems
with lemon tahini
Servings: 6
Ingredients:
Dressing:
1/4 cup canola or other neutral-flavored oil
1/4 cup tahini
3 tablespoons lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1 garlic clove
Salt and freshly ground black pepper to taste
Gems:
6 Church Brothers Farms Little Gem lettuce heads, sliced in half from stem to stem
2 tablespoons olive oil for brushing the lettuce
12 cherry tomatoes, sliced in half lengthwise
1/4 cup crumbled feta cheese
Salt and freshly ground black pepper to taste
Instructions:
Dressing: Place all dressing ingredients in a food processor or blender and process until smooth. If dressing is thick, add 1-2 tablespoons of water and blend again. Season to taste with salt and pepper.
Grill the Little Germs: Heat a grill pan to medium-high and lightly oil the surface. Brush the lettuce with olive oil, season with salt and pepper, and grill, cut side down, for 1-2 minutes until it is lightly charred. Remove from heat and place heads on a serving platter.
Assemble: Drizzle 2-3 tablespoons of the tahini dressing over the heads. Add tomatoes, feta cheese, and salt and pepper to taste. Serve immediately.
