Char-grilled Little Gems with Lemon Tahini

Servings: 6

Ingredients: 

Dressing:

  • 1/4 cup canola or other neutral-flavored oil

  • 1/4 cup tahini

  • 3 tablespoons lemon juice

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • 1 garlic clove

  • Salt and freshly ground black pepper to taste


Gems:
 

  • 6 Church Brothers Farms Little Gem lettuce heads, sliced in half from stem to stem

  • 2 tablespoons olive oil for brushing the lettuce

  • 12 cherry tomatoes, sliced in half lengthwise

  • 1/4 cup crumbled feta cheese

  • Salt and freshly ground black pepper to taste

 

Instructions: 

  1. Dressing: Place all dressing ingredients in a food processor or blender and process until smooth. If dressing is thick, add 1-2 tablespoons of water and blend again. Season to taste with salt and pepper.

  2. Grill the Little Germs: Heat a grill pan to medium-high and lightly oil the surface. Brush the lettuce with olive oil, season with salt and pepper, and grill, cut side down, for 1-2 minutes until it is lightly charred. Remove from heat and place heads on a serving platter.

  3. Assemble: Drizzle 2-3 tablespoons of the tahini dressing over the heads. Add tomatoes, feta cheese, and salt and pepper to taste. Serve immediately.
