Recipe: Wild Arugula With Fresh Peach And Toscano

A light summer wild arugula salad

SALAD
INGREDIENTS:

1 Bag of Wild Arugula
3 Ripe Peaches
¼ Red Onion Sliced Paper Thin
Small Wedge Toscano Cheese, Shaved
Olive Oil
Fresh Lemons
Flaked Sea Salt (such as Maldon) and Cracked Pepper to taste

INSTRUCTIONS:

Slice peaches into ½ inch wedges and place into a large bowl with the wild arugula and red onions. Lightly drizzle olive oil and a squeeze of lemon to lightly coat the salad. Sprinkle flaked sea salt and cracked pepper to taste. Finish the salad by shaving Toscano cheese with a vegetable peeler.
