Roast Salmon with Kale Color Crunch
Salmon
1. Portion 4 Salmon filets in thin 5 ounce strips, approximately 1” by 8”.
2. Season with salt; pepper; and lemon Juice.
3. Coat ring mold with olive oil.
4. Wrap fish around mold and roast at 350 for 7-8 min until done.
5. Hold till plate up.
Bell Pepper coulis
Red- 
2- charred red peppers, peeled.
½ Roasted tomato
2 sprigs fresh Basil.
2 finger pinch salt
½ pinch pepper
Green-
2 charred green peppers, peeled.
1 green onion
1t- Fresh thyme
1t Salt
½ t pepper
Yellow-
2 charred Yellow peppers, peeled.
1t Turmeric
Pinch salt
Puree each sauce with a splash of water and a 1/2t Agar Agar. Run through chinois. Adjust seasoning and viscosity if necessary. Hold warm for plate up.
