Ingredients:

2 Ounces

Pasteurized Egg Yolk

4 Ounces 

Anchovies, Rinsed, Chopped

2 Ounces

Lemon Juice

6 Ounces 

 Red Wine Vinegar

2 Teaspoons

Worcestershire Sauce

4 Ounces

Garlic, Fresh, Chopped

2 Teaspoons

Tabasco Sauce

2 Tablespoons

Dijon Mustard

1 Teaspoon

Black Pepper, Ground

1 Teaspoon

Kosher Salt

5 Cups

Oil Blend

8 Ounces

Parmesan Cheese, Grated 

Preparation: 
  • Place all ingredients except oil and cheese into a blender

  • Using an immersion blender, blend thoroughly 

  • Slowly add oil with mixer running to create an emulsion

  • Blend cheese into dressing

Serving:
  • Serve over prepared salad

  • or place into suitable sized storage container

  • cover, label, date & refrigerate; using as needed
